What is the process for open days?

I am a private landlord (uk) and have gone through a process on 99home of advertising and I am now sifting through the interested parties. I sent out a basic set of questions (such as how many people, work situation etc) and that has whittled down the list further. So now I am setting up a couple of open days (2hr windows). So question is, what is the best process to manage the open days? I am presuming if they still are interested they will tell me there and then, so how should I respond? Do I say thanks for your interest, I’ll be in touch? Then what is the process following that? Sorry it seems such a basic set of questions but this is the first time I have done it myself!

I wouldn’t waste your time with too many people. Can only rent it out once.

Just pick the best applicants and show them

How have you setup an open day I tried this on open rent and loads of people said they were coming to view and I got a total of zero actually arrive. I just hire agents to deal with tenancy finding now as they filter out all the crap and do all the viewings.
