Have a lodger leaving today, year old new build, a few months ago they made a coffee in a protein shaker, it exploded up over the kitchen ceiling splattering all over. I bought some paint and painted several layers over the coffee, but stains can still be seen. Needs more layers/to be done professionally.

Whatever youd be charged by a professional. Which is most likely all the deposit.
FWIW did you paint over with a stain blocker? Because otherwise you shouldn't be able to see it.
However much it costs to get someone out to repaint, deduct from the deposit.
You need to paint over it with stain blocker, or however many layers you put on it will come through.
Personally, I would charge the cost of stain block, paint, and an hour of your time to deal with it.
I feel if this was several months ago you should have had this discussion at the time.
Not really, he was aware of it and aware that I painted it. And had offered to paint it himself over a few months until got too long and had to be sorted.
He offered to fix it at the time and you've lived with it for several months.
It sounds like you weren't prepared to have a conversation with him while he remained a lodger and are now trying to get it from the deposit now he's leaving. I think he'll object.
He offered to fix it several times, but never did, he had months to sort. I had the conversation several times, he mentioned the 2 issues of paint prior to moving out. He can object all he likes, he's gone and deposit (minus last week of rent) is currently in my account...
I'm a tenant not a LL and if I sprayed a kitchen with coffee or such I would be buying paint and sorting it out myself. If heating doesn't work or the electrics become unsafe straight to LL but if I would be so embarrassed to not clean up after myself after something like this. Keeping ALL the deposit and applying any additional costs.
Get quotes to have it professionally redone and make the claim for the quoted value, present your evidence of the damage and the quotations for repair to the scheme when you make your claim and let them decide. If you have anything from the tennent accepting that they caused the damage submit this alongside your evidence and I don’t see any issues with this claim getting awarded
